Thank You!
Heading into our last weekend at Wolfert's Roost I wanted to stop and reflect on the past 2 years.
First off, we all want to thank the many guests who have enjoyed the Roost with us. The outpouring of love and happy faces was something we loved every day. We always wanted the Roost to be a welcome special place and it was wonderful to know that we made it that for so many people.
The team of hardworking people who have made the Roost go never ceases to amaze me. Lindsay, Meg, Benji, Victoria, Erik, Jorge, Oscar Marcella and many others have each put in so much hard work and love. They took the Roost from a kitchen and an idea and turned it into a thriving reality.
Most important, I want to stop and talk about Will and Jennie.
My brother Will started working with me when he was 15. He had never picked up a knife or cooked anything more than a piece of toast. Working for so many years with family isn't always the easiest, but when I step back- the pride and enjoyment I've gotten watching him grow into a talented young chef while working at the Roost has been one of my favorite things about these past 2 years.
Jennie and I graduated from culinary school together with big dreams. We always said we wanted to cook together and somehow it became a reality. For both of us, opening this restaurant was a dream come true - and we couldn't be more proud of what we built and accomplished. The opportunity to cook with Jennie, watch and learn from her everyday is something will be special to me forever.
Over the last 2 years, I have received a lot of recognition and accolades for Wolfert's Roost. It's always made me feel a bit strange having my name tied to it so much - Jennie, Will and the team are what made the Roost the place it became. Their talent, love and hard work is what earned all of the praise Wolfert's Roost received.
So... Will, Jennie and I are closing a restaurant that when we opened was a dream come true for us. While it's a bittersweet moment, we are all in agreement that it's mission accomplished. We have done everything we set out to do with the Roost and it's time to high five and head off into our new dreams.
Jennie will one day soon have an amazing restaurant on the North Fork of Long Island, Will is ready to spread his wings and continue growing and I'm thrilled to be opening Slice Shop. Our lives and dreams have changed and we did not want the Roost to have change into something different.
I want to say thank you again to everyone who has been part of our experience at the Roost. It's been a wonderful ride that will shape us for the rest of our lives.
