TOP SECRET RECIPE! Over the years I’ve cooked 1,000’s of roasts at my restaurant. This is how we did it.
Don’t skip the Saran Wrap step, it’s secret I learned from my mother. It really makes a difference. Be sure to bake them slow! When you remove them from the oven let them sit. After about 1 hour remove the foil. I use tongs to remove the roast from the pan.
This will be the best time to remove the fat. If the roast is cooked properly it should come right off. If I want the slices to be perfect I refrigerate the roast overnight before slicing.
Be sure to make gravy from the amazing drippings in your pan! It makes Bodacious gravy or so I’ve been told!
