Mozzarella cheese

1 gallon whole milk
1 cup white vinegar
1 Tablespoon salt

In a stock pot heat 1 gallon whole milk to 110*. Turn off heat and pour in vinegar. Mix for 30 seconds.

Let it rest for 30 mins covered. Curds and whey will separate. Then gently scoop milk curds out and place in a strainer or cheese cloth and let strain for 10 mins.

Try squeezing to get excess water from curds and form into a ball.

Then heat stock pot with the whey to 136* and place your cheese ball in hot whey and begin stretching. Do this until it stretches and pulls nicely and becomes smooth.

Then place in bowl of cold water and refrigerate.

Bread recipe:

3 cups flour
1 packet rapid rise yeast
1.5 cups warm water
Pinch of salt

Pre-heat you oven to 300* in a mixer add in your flour, yeast, salt and water and using your hook attachment beginning mixing the dough.

Mix for about 10 min until everything is well combined. Cover and set aside for 2hours and let rise.

Once dough has doubled is size place a lined dutch oven and bake for 45 mins covered.

Then uncover and bake for an additional 10mins or until golden brown.
