After over 35 years in the hospitality industry, I’m retiring—at least for now. The mind, body, and soul will enjoy a much needed rest as I close this chapter and embrace all of the things I’ve put on hold for so many years.

I’ve been incredibly fortunate to have such a supportive family and to have worked alongside some of the most talented and hardworking individuals. Together, we didn’t just create meals; we created unforgettable experiences.

But the real magic of this journey has been the people. I’ve learned so much from each of you—whether it was a new technique, a fresh perspective, or a simple word of encouragement.

Anthony Bourdain said it best, “Maybe that’s enlightenment enough: to know that there is no final resting place of the mind; no moment of smug clarity. Perhaps wisdom...is realizing how small I am, and unwise, and how far I have yet to go.”

Our “Restaurants Across America” Dinner Series continued this week as we paid homage to some excellent Italian 🇮🇹 restaurants!
➡️ Pane - Focaccia, herbed oil, mango, burrata, basil

➡️ Caesar alla ZZ - Romaine, anchovies, parmesan, semolina crouton, tomato butter

➡️ Strangulet - Mama Boston’s famous sauce, tasso, aglio, olio, manchego (Pietrelcina, Italy)

➡️ Pork Tenderloin - Reverse seared tenderloin, apple smoke, fennel, mushrooms, parsley gremolata

➡️ Marsala Panna Cotta - Heavy cream, vanilla, hazelnut, pear

Our very own JJ Boston was featured in the Indianapolis Business Journal this week sharing his thoughts on the famous “food sport” competition in Indy - World Food Championships.

Billed as the “world’s largest food sport competition,” the event will feature more than 1,200 chefs from more than 30 countries battling in 12 categories at the Indiana State Fairgrounds; 21 Indiana chefs are scheduled to compete.
