We're back from the Spud Nation Throwdown at the Potato Expo in Las Vegas. And after over 12 hours of sleep, I'm starting to feel human again. 😜

We didn't win, we got 2nd place. But I did get the People's Choice award, and considering this is the first time I've ever done anything like this, I'm pretty happy!

I'd like to send a lot of love to Rich Holmes, best support team I could have ever asked for! And Judy Banter, my momma, for taking care of my puppies so I could concentrate on the competition. Couldn't have done any of this without the two of you!! Love you both so much!

Also, I'd like to thank all the support I have received from family, friends and customers! You guys rocked and I really appreciate all of you! Thanks for bearing with my many many Spud Nation posts and thanks for making me feel like a winner, even though we were the first loser. 😉😘😄

And of course, thanks so much to Phil Lempert and his team who put this all together (Al), the Potato Expo people, the US Potato Board, the Mirage team that cooked over 2000 samples of my food and all those crazy potato people-you all were so much fun!

So exciting to see what could come next for the Spud truck and catering company.

POTATO EXPO 2016 TO FEATURE FIRST FOOD TRUCK CHEF COMPETITION

Washington, DC—For the first time, Potato Expo 2016, the largest conference and trade show for the potato industry, will host a food truck chef competition highlighting the broad appeal of potatoes and mobile food trucks. During the Spud Nation™ Throwdown on January 12, three food truck chefs selected as finalists of a nationwide competition will present their most creative and flavorful potato recipe. A panel of judges will crown one of the chefs “Top Spud” with an award of $5,000.

There are more than 4,500 food trucks operating in the U.S. and nearly 50% of consumers will purchase a meal from a food truck this year. With the growing appeal of food trucks due to convenience and taste, many chefs are offering creative takes on traditional dishes. “The growing number of adventurous diners combined with the universal appeal of potatoes, both as center of the plate and side dish recipes, is the perfect storm,” said Phil Lempert, Supermarket Guru. “We predict big things for these food trucks.”

The chef finalists are:

· Heather Banter from Circle City Spuds – Indianapolis, IN

· Daniel McCarthy from Tato Heads – Columbus, OH

· Bridgett Blough from The Organic Gypsy – Kalamazoo, MI

Inspired by the Great American Food Truck race, Circle City Spuds, a one-woman operation, is comfort food with a kick. Naptown, a nickname for Indianapolis, provides a dual meaning for Banter’s entry. “We think the Naptown Mac & BBQ spud is a perfect ending for Vegas nights,” said Banter.

The Organic Gypsy features a chef with formal culinary training whose supplier of potatoes happens to be her father, a farmer. “I grew up eating potatoes 5 nights a week. I’m excited to bring to Vegas healthy comfort food with a twist in my Green Tahini Potato Soup.”

Tato Heads, which is also launching a restaurant, takes the clean slate of a potato and elevates the palate with multicultural flair. McCarthy sources from local businesses, purchasing his chorizo out of Cleveland and spices out of Columbus. His entry for the Throwdown is the Chorizo Cheese Fries. “Late night or early morning, these tater tot fries hit the spot,” he added.

In addition to the three finalists, honorable mention went to STUFT Gourmet Baked Potatoes out of North Carolina. Join us January 12 to discover the next great thing in potato food trucks!

It's official, we've made it to the final round and we are one of three food trucks that will be competing for "Top Spud" in Vegas, in January. We're so excited! We get to make the Naptown Mac & BBQ Spud for all the major potato producers in the country at The Potato Expo, as we compete for $5,000. My mind is blown right now.

A nationwide recipe contest for Food Truck Chefs.
