Indigenous societies in the Americas bred chiles over thousands of years, resulting in an extraordinary diversity of varietals. But they weren't just cherished for their culinary applications. The Aztec empire even used chiles as a part of their taxation system!

Although they have become central to global cuisines because of colonization, our modern industrial food systems are choking out the diversity at the root of this storied plant.
