To our last day, here in the great city of Independence Aug 1, 2026.

Without getting too sappy and detailed, this business and this community has meant so much to us. We did not know what to expect when we announced our closure- but you all have shown up with so much love, support, and care for us. And it truly means more than we ever can express. The fact that we sold out in less than 2 hours of opening is beyond our comprehension.
Truly all we have to say is thank you. Thank you for showing up. Thank you for allowing us to be our authentic selves. Thank you for allowing this business to be apart of our lives for 6 years.

We will never forget this journey and the love we’ve felt, we are extremely grateful to have been able to meet all of you and do this food truck.
With SO SO much love, these wizards are officially signing off.💜🧙‍♂️

6 years later, over two dozen quesadillas created, thousands of our community served, we are officially closing the truck after this weekend (Saturday as long as supplies last).

While this may feel surprising and fast, this has been months of hard discussions, soul searching, and a lot of self reflection behind those windows.
We truly love this truck, love this community, and love what we do SO much- but at the end of the day, this is not sustainable and it’s time to move on.
We have put everything we have into this business and this foodtruck, we built the truck with our bare hands, made all of our sauces on our own, shopped locally, and made great connections with all of you. When we started we had so many ideas and goals of growth, but in 2026, a brick and mortar is no longer a goal that feels attainable or even desirable.

We want to extend a big thank you to everyone who has supported, posted, spread the word, followed us around Marion and Polk county- we wouldn’t have lasted this long without your unwavering support and dedication to our craft.
Please know that this message is written with a heavy heart. While we are excited to take on our next chapter, and confident that this is not the last time you’ll see our names running a business. It is a goodbye for now.

Please stop by in the next few days, as we’d love to personally thank you and say goodbye in person.

So sorry y’all but with this heatwave, we will not be open today or tomorrow! (7/21 & 7/22) luckily, the rest of the week definitely seems to cool off a bit and we should be good to reopen the remainder of the week!

Well well well, HAPPY NATIONAL CHEESE DAY🧀
Today we would like to shout out or amazing cheese supplier: Mariano, who owns La Mariposa 🦋
When opening in Oregon finding a high quality, hand crafted, LOCAL cheese was extremely important to us. Since trying La Mariposa’s cheese, we have never looked back and have been serving every quesadilla with their mild cheddar (yes, even the dessert dillas had a little bit in there) since October 2021.
Mariano himself has been incredible to work with and provides consistently fantastic cheese.
If you’re trying to find him, check out the Albany and Corvallis Saturday markets where he frequently sells at!
