GOOD MORNING MOHAWK VALLEY!!!!
The sun is up and so are we.
The pits are rolling and the kitchen is getting ready for a CELEBRATION!!!!!
This week we have celebrated Ilion Days, a week of special events, fireworks and the DO DA PARADE!!! This week we celebrate small town USA, our small town!!!
Seeing this community come together, showing support for everything that is ilion, past, present and into the future. Inspiring and energizing.
We can not wait to see what this community can accomplish together.

Now......on to the business of the day.
Briskets are resting and the kitchen is stocked.
We are closing a bit early today so we can roll the ESV (Event Service Vehicle) in the DO DA parade this evening.
We will be closing the kitchen at 3:00 today, so this means NO DINNER SERVICE TODAY.
If you need your 508 Salvage BBQ fix for the week ya better get to it.
Oh yeah we will be CLOSED SATURDAY too for a private event.

Another hazy valley day here at the 508 Salvage BBQ co.
Ribs are on the pit, so are a few orders of our smoked Cajun Wings. We went through a lot of those Wings yesterday!!!!
Baker Bombers are in the roaster and will be ready for lunch service.
Dont forget, we have a short day tomorrow. Due to the DoDa parade we will be closing at 4.

Another Wednesday is upon us and what a weird color in the sky today. Damn wild fire smoke, thanks Canada LOL.
Our smoke is rollin today too. Smoked Cajun Wings Should be ready for lunch service today.
We are open regular hours Wednesday and Thursday this week.
Friday however we will be closing at 4 so we can celebrate Ilion Days in the DoDa parade!!!
Saturday we will be closed for a private event.

We almost made it to 7:00 tonight.
We sold out of every morsel of meat and every side in the house is gone.
The 508 Salvage BBQ crew is sooooo happy you all like the meals we prepare. We will be back at it again tomorrow and next week starts ILION DAYS!!!! We cant wait to celebrate our small town with all of you. We will be cooking up some fun specials for next week so stay informed and follow us on Facebook.

Welcome to Friday!!! The end of the work week for most, Game time for the Salty 508 Salvage kitchen crew. Why do we work the long hrs and tolerate the heat? WHO THE HELL KNOWS!!!!
Maybe we are all just 🤪 crazy, but for me personally.....I Love this S #%$.
We love the pace of the kitchen, the rush of being in the weeds. All the smiles and gratitude we get from our 508 Salvage BBQ family.
So Friday is here, its time for some BBQ!!!!!

Good morning 508 Salvage BBQ family. The sun is shining and the pits are rolling smoke. Ribs and Brisket are the order for the day. We will have both ready to go today and we made a LOT!!
Smoked Cajun Wings will be available today too. Be sure to ask.
We are open for our full schedule this week right through Saturday.
