LATTE TEMPERATURE

We’ve had quite a few requests for extra-hot lattes lately, so we figured it was time to pull this one back out of the Late Run Grounds for Growth vault 🌱

We’re not arbitrarily deciding how hot your drink should be; we’re making choices based on the product. If you’re curious why we don’t normally steam your latte milk until it’s screaming, keep reading ⬇️

For cow’s milk, we generally aim for somewhere around 140–155°F. That range gives us the balance we’re looking for: sweetness, good texture, and silky microfoam. Alternative milks have their own sweet spots, too, and we adjust accordingly.

Our general steaming targets:
Dairy milk: 140–155°F
Alternative milks: generally 130–145°F, depending on the milk

As milk heats, its perceived sweetness changes, and around the 140°F range is where it can taste especially sweet. Keep pushing the temperature higher and eventually you start trading away some of that flavor and texture. Overheated milk can develop a cooked flavor, and the silky microfoam we’re working for starts suffering too.

So, can you order your latte extra hot?

Absolutely. It’s your drink.

Just know there’s a tradeoff: the hotter you want it, the more we may sacrifice some of the flavor and texture we’re trying to put into your cup.

We’re not being difficult. We just really, really like making good coffee.
