Yall call somebody. We just cooked a whole hog that might could get in a finals. A lot of good cooks here showing off! Happy 4th and Happy 250th America. Nothing says America like camping at Fireman’s Island and cooking a whole hog with the best friends a family could ever have. Then my boy Blue, cooking them cast iron skillet potato’s and cowboy beans! Somebody shut the front door!

It was an honor for me to be given the chance to cater for the Freeman family as there son approaches his wedding day. It was a tool and gadget party and it all went very well. The menu was pulled pork, smoked mashed potato’s, baked beans, slaw that Jennifer homemade), and baked potato salad. I have catered several events in the past for roughly 75 people, so I kind of know about what the quantities of each should be. This one was different. Everyone was able to eat some of everything the first trip, then came the 2nd and 3rd rounds were the grazers came back to finish it all off. Thanks to the Freeman family giving me the opportunity to cook for their family during a huge life accomplishment for their son.

I am just now getting time to update the results of the only BBQ contest I will cook this year, and I have not cooked one since this contest last year…. So it’s been a minute and it’s not like riding a bike! With all the hundreds of BBQ rubs and sauces along with brines and injections, the flavor profiles change over time and what was winning now struggles to get a call. My goal
1. Not finish last
2. Hear my team name called at least 1 time between the Friday contest and the Saturday. My goal is this… if I cook good enough to hear my team name called, then everyone knows I was there. I was blessed to not finish last and I had 1 call on Friday and 1 call on Saturday so I leave a winner in my mind. Here are my some pictures of my turn in boxes from the Iron Man on Friday and then KCBS on Saturday. last weekend. Definitely not my best effort…. I have turned in a lot better, but I have also turned in way worse. I can’t argue the results. Good luck to everyone cooking the rest of this year. Keep the smoke blue!

Man there was a time when the “Jungle” pretty much ran BBQ Hill in Lynchburg at The Jack. The shade tree teams were the ones that made The Jack the most money, and maybe the most problems….. but this picture was taken right off the bus but I forgot to put my chicken in the brine. I wrestled with myself if it was worth the hassle of going back down, walking 1/2 mile to the camper to put chicken in a brine, then back…. But I went back and missed this iconic picture. The Upside was I snagged a Reserve Grand, so I guess I made the right choice. But some of the best 256 teams are represented here in 2017.

I had the chance this past week to cook some ribs for some of the great people I work with. Most people I work with have seen the trophies and have heard the stories, but I have never taken the time to cook something for those people to try. I realized long ago that if you take the time to take care of the people you work with, they will take care of you. To everyone who had a chance to try a rib, I hope it wasn’t a disappointment and im sorry I have not taken so long. All I can say is the Stump's Chubby Baby Smoker didn’t even flinch with temps in the 20’s. The ribs sure looked good to me, but I didn’t try one. I have not received any reports of anyone being sick yet. To all the people who help their employees, even when you don’t have to… i assure you, you’re noticed and appreciated.
