One of the questions I get asked the most is about catering. Before opening the food truck, I worked as a private chef and created a lot of custom menus and elaborate display setups. So naturally, people always ask if I still cater.

The answer is YES! 🎉

The only difference is that I now exclusively cater the Grits At Nite menu. I no longer offer custom menus, but catering does give you access to our FULL menu, including:

Owning a food truck is not for the weak 😵‍💫

Repairs happen. It’s honestly my least favorite part of the business, but it comes with the territory. Outside of scheduled maintenance, there’s always something that can pop up unexpectedly and keep you from opening back up in time.

Nobody tells you when you buy a food truck that you’re also going to become an electrician, auto repair guy, plumber, janitor, and everything in between. Owning one of these is a lot of work. There are so many moving parts behind the scenes just for us to be open and serve you all for the Nite.

We truly appreciate everyone checking on us and making sure we’re good. While we’re down, we’re also taking this time to make a few upgrades that should create a smoother experience for everyone when we’re back.

We’re looking forward to getting back to the Nite soon.

Back when Ben Oakley was working as a private chef in Orlando, he cooked for rappers and pro basketball players and for companies like Facebook. Oakley was often booked for brunches. That’s how grits emerged as a standout item for him.

A Florence native since relocated back to Alabama, Oakley now puts his grits wit to excellent use with his Huntsville-based food truck Grits at Nite. Their tagline: “Anytime is a good time for brunch.”

The menu centers on shrimp and grits, a dish popular and populous in Huntsville. Oakley’s version is a phenomenal addition. Succulent jumbo shrimp, velvety grits and his “hog trinity” of sausage, bacon and peppers.
