Yeast Inoculated Washed Colombia

Victor Chala is a second-generation producer man again Finca Palma Rosa in Santa Maria, Huila with 4.5 hectares of cropland. Fourteen years ago he bought the farm with a clear goal : producing for the specialty market. His process reflects that intent-ripe cherries are floated, depulped, and sealed for a 65-80 hour mixed fermentation with yeast, then washed and dried on raised beds for 10-15 days.

Malaki Estate has been family owned since 1959, now guided by Florence Marigi and her daughter Jessica on the slopes of Kenya’s Aberdare range. At 1900 m+, red volcanic soils and cool temperatures support an exclusive focus on SL28 and SL34. Cherries are hand picked across two annual seasons, fermented 36-48 hours, and dried slowly on raised beds over 14 days, producing cups that reflect decades of careful family stewardship.

Marlon grew up knowing coffee as his family’s livelihood, but it wasn’t until he was 17 that he began to see its deeper potential. What started as a curiosity became commitment: planting differentiated varieties, refining fermentation through trial and error, and building his skill alongside his two brothers. His farm is a generational piece of land that, with patience and determination, can become a speciality hub in Acevedo.

Sochiapam is one of Oaxaca’s largest coffee-growing municipalities, tucked into some of the region’s highest elevations. The area is heavily forested, home to a protected natural reserve its producers actively maintain. For years the focus here was volume over quality, but that’s changed. With harvesting, fermentation, and drying, younger producers flipped the script, and the results speak for themselves.
