Good Morning everyone! Today is ! Curry can’t wait to tell you about our Sumatra Mandheling. Let’s hear what he has to say!

“When I want a cup that feels grounded instead of bright and flashy, I reach for our Sumatra Mandheling. Wet-hulled in the highlands around Lake Toba, it comes through as dark chocolate and brown spice, then earth, molasses, and rich, creamy body that just stays with you. If you like coffee that drinks smooth, low-acid, and a little wild, this is the one I keep recommending”  — Curry
The processing of Sumatran coffee (like in most of Indonesia) is very unique. Farmers in Sumatra process the coffee beans with what is called the wet hulling or “giling basah” method. As soon as the cherries are harvested, they are depulped using rustic local machines. The beans are then stored in bags or tanks for (dry) fermentation overnight. The next morning, farmers wash the remaining pulp from the beans and after a quick dry (to 35-40%) the coffee is brought to a hulling station to be hulled (ergo the wet hulled method). After hulling, beans are dried to 12% moisture. The wet-hulling process results in a more earthy and less acidic coffee. Together with its full body and some nice notes of fruits and berries, these are the distinctive features of Sumatran coffees.

"Hi there coffee lovers! I’m Liz, the co-newest member of the House of Coffee Beans team! Although, I’m not new to our Bissonnet shopping center, having started work at Murder by the Book about 6 months ago after graduating from Rice with my PhD.

I’m excited to make my first staff pick at House of Coffee Beans, which is Tanzania Peaberry!! These adorable little beans are done to a medium roast and have a very pleasant aroma. The coffee is bright and sweet, while still chocolaty, with lovely fruity overtones of berries and orange. A very interesting and enjoyable cup of coffee!!" - Liz
