Ingredients:
For the Cake:
6 large eggs, separated
1/2 cup white sugar
1/3 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/8 teaspoon salt
1/2 cup all-purpose flour
For the Filling:
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
For the Frosting:
1 1/2 cups heavy cream
1/4 cup confectioners' sugar
1/4 cup unsweetened cocoa powder
1/2 teaspoon vanilla extract
For Decoration (optional):
Confectioners' sugar for dusting
Fresh berries, chocolate shavings, or edible decorations
Instructions:
Prepare the Cake: Preheat the oven to 375°F (190°C). Grease a 10x15-inch jelly roll pan and line it with parchment paper.
In a mixing bowl, beat egg yolks with sugar until thick and pale. Add cocoa powder, vanilla extract, and salt, blending until smooth. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the yolk mixture until just combined, then fold in the flour.
Spread the batter evenly in the prepared pan. Bake for 12-15 minutes until the cake springs back when lightly touched.
Immediately after baking, turn the cake onto a kitchen towel dusted with confectioners' sugar. Gently peel off the parchment paper, then roll the cake with the towel into a spiral. Let it cool completely.
Prepare the Filling: In a bowl, whip heavy cream with confectioners' sugar and vanilla extract until soft peaks form. Carefully unroll the cooled cake and spread the filling evenly over it. Reroll the cake (without the towel) and transfer it to a serving platter.
Prepare the Frosting: In another bowl, whip heavy cream, confectioners' sugar, cocoa powder, and vanilla extract until stiff peaks form. Spread the frosting over the rolled cake to resemble bark.
Decorate (Optional): Dust with confectioners' sugar for a snowy effect, or add fresh berries and chocolate shavings for a festive touch.
Note:
This classic French Yule log cake is perfect for holiday celebrations and can be decorated to resemble a real log with creative garnishes.
