Follow the students and chefs in their passion.

In the kitchen, our students are not given a pre-packaged cut of meat, like a chicken breast or pork chop. They are taught to utilize an entire animal, from its nose to its tail. In the world of butchery, this is known as meat fabrication. Fabrication can be thought of as a fine tuning process.
