We have an entire pastry program thanks to the talents of Chef , who makes every one of our desserts entirely from scratch. Here, he’s making standard French éclair that’s got a wonderful strawberry craquelin on the outside. Craquelin is a thin and crunchy outer layer that forms a textured shell. You can see him stirring the base of the Nutella ice cream before freezing it. Each éclair is filled with Nutella mousse and served over a light airy spread of strawberry whipped cream.

We have a constant rotation of special sweet treats as part of your night cap, so between seasonal kakigōri, and other dessert fare, you’ll just have to come back to see what’s new!

Thank you for the gracious recognition of Chef of the Year at the Tastemaker Awards again for ! Representing this achievement in 2019 when it was just , and now getting to do it again in 2026 with the addition of , and now the introduction of , is genuinely so reassuring of our commitment to bring Japanese food and culture to the city of Houston in a way that resonates with our community. Kagoshima Wagyu is Japan’s top-producing prefecture for Wagyu beef, renowned for its intensely marbled, sweet-fat richness that comes from a combination of black Berkshire-cross cattle, a mild southern climate, and meticulous feeding programs. It has consistently won the title of Japan’s best beef at national competitions.

In Japanese cuisine it’s prized because the fat melts at near body temperature, coating the palate in a way that’s less “beefy” and more like a flavor dissolving experience.

For nigiri, torching (aburi-style) does two things: it partially renders that extraordinary fat so it bastes the meat as it melts, and it triggers a light Maillard reaction on the surface, adding a whisper of caramelized, smoky depth without cooking through. You’re basically getting three textures and temperatures in one bite.

Oh, and we absolutely will shower the hell out of it with black truffles. You’ve made it this far for something that luxurious, why not accessorize it a little more?

Big congrats to for being recognized as an Outstanding Chef semifinalist in the 2026 James Beard Awards amongst other dedicated and talented industry leaders!

It would take 15 years since the birth of before Chef Hori and his team opened as a gift to the city of Houston. And now, he’s looking forward to his introduction of .

If you’ve gotten to know him, even in passing, you’d immediately understand his immense respect for the traditions, history, and trade of making sushi. You’d also appreciate and admire that he knew from a very young age, THIS is what he has ALWAYS wanted to do—so much so, that he’d do it in America, even without knowing a word of English. That would mean to date, Chef Hori has practiced his craft for 31 years, and he wouldn’t have any reservations admitting that he got into this line of work so he could eat sushi every day.

Thank you to all the supporters for always understanding his fervor of showcasing Japanese cuisine, from the wonderful guests who return and look forward to adventurous new bites, and to the dedicated team and partnerships that have continued to trust his vision by expanding it into reality.

The legacy that grounds both , , and is built on 15 years of friendship between and that started at ’s infancy.

Together, our teams have spent the past two months deliberating over what it means to marry Italian and Japanese cuisine in a way that could resonate with our guests. It only made sense to do it through the Feast of the Seven Fishes, an Italian-American Christmas Eve tradition centered around a multi-course seafood meal symbolizing abundance, but in a way that also pulls on our Japanese fare. Not only was this experience about food and the joining of two disparate themes, but both of our beverage leads made sure to find pairings with every course that highlighted the dishes with exquisite and rare sakes and wines.

We are so incredibly fortunate and thankful that our guests and all of our teams celebrated an evening under our roof, where a large part of these proceeds will support . This organization was founded here by native Houstonians, and , as a nonprofit that supports food and beverage workers, nationwide, by providing emergency relief funding and access to mental health resources.

Hospitality workers are the heartbeat of every food and beverage experience the moment you step outside your house, and we will continue honoring our community that always serves our appetites.

This was our very first collaboration dinner at , and it certainly won’t be the last.

Chestnut Mont Blanc is the latest addition to our seasonal dessert that marries French pâtisserie technique with Japanese precision and appreciation of subtle sweetness. The best part of this classic is revealing what’s inside once you spoon into its hidden layers.

Our pastry chef, , makes a light green tea sponge cake that’s enveloped by a cloud of vanilla whipped cream, then overlayed with piped Japanese chestnut crème. It’s topped with candied Japanese chestnuts for a little texture and to bring out their earthy, nutty flavor.

The result is a soft, airy dome that looks like a little snow-covered mountain—hence the name “Mont Blanc.”

This one’s an easy crowd pleaser as we head into the holiday season, so you’ll have to ask for this dessert special the next time you’re in.
