Before this is a plate at Andes Café, it's a mountain range.

Peru grows over 4,000 varieties of potato, most of them found nowhere else on earth, many of them still grown the same way they have been for centuries, at altitudes over 12,000 feet. That's not a fun fact for us. That's what's underneath the fries on your Stir-Fry Beef and Rotisserie Chicken.
And then there's the lomo saltado, Peru's stir-fry born from Chinese immigrant kitchens generations ago, now one of the country's most iconic dishes. But look at what's next to it: potatoes, grown in the Andes at over 12,000 feet. One dish, two histories.
