Story time:
This pasta hails from the Emilia Romagna region during a wave of anticlericalism amongst the lower class.

It was customary for families to serve priests as they arrived door to door to Appenine village families collecting taxes on behalf of the church.
•
Legend has it that families served ” Ingannapreti” or “sorpresine” pasta to “trick the priests” with “little surprises,” as they anticipated heartier, filled pastas.
