A love letter to the food we love.

On August 16, we welcomed sous chef Harri Ines into the kitchen for an evening edition of the Protégé Series.

Ines brought his Kalihi roots and his résumé to the table: veal shank agnolotti en brodo, a pinakbet reimagined with kampachi and pork belly croutons, and a Hawaiian plate of braised luau and lau lau stew. But the real ingredient was intention. Every dish on this menu was made for the people who couldn’t be there to eat it. And that’s the whole point of Protégé: to give Hawaiʻi’s rising chefs not just free rein, but a reason to use it, then let the food do the talking.

A Kalihi native, Chef Harri has built his career in kitchens across Honolulu before making his way to Fête, where we’ve had the privilege of watching his culinary voice take shape and continue to evolve. For this one-night-only dinner, he’ll take the lead with a three-course “choice of” menu that reflects the experiences, mentorship and flavors that have shaped him along the way.

A portion of proceeds from the evening will benefit Hawaiʻi Public Radio.

We’ve traded last season’s pan-seared Kona kanpachi for a grilled version for this season.

Served over a generous spoonful of ajvar, a smoky eggplant and roasted red pepper spread, some of you might recognize it from our previous Fête Spreads. Add patatas bravas, lemon aioli, Kupu mix, and a grilled lemon, and it all just makes sense.

Some ingredients are dish too good for one season.
