It was a great honor to cook for Fukuoka Governor Seitaro Hattori and guests at the event last night - and alongside other chefs and students! Wade made wild red sea bream with crispy mochi rice crust, Fukuoka aria or nori, fresh wasabi, “nametake” Hakata Buna shimeiji mushrooms, pickled Hakata eggplant, .limu.company sea grapes, and sea asparagus.
made a pavlova with yame-matcha tapioca, azuki, haupia, Okinawan sweet potato, and taro. Mahalo for visiting Hawaii! Hope to see you again!
