All pasta served at Mio Pastalogy consists of water and semolina flour. What exactly is semolina flour you may ask? Semolina flour is a type of flour made from durum wheat. Durum wheat is more coarse than traditional flour and also darker and golden in color. Semolina is most commonly used in the preparation and creation of pasta. Due to its extremely high gluten content, it is ideal for pasta as it helps maintain the shape of all pasta and its respectable sizes. Eating and consuming semolina also has its health benefits. Along with it being high in protein (almost 6 grams), it is also rich in b vitamins, thiamine, and folate. Another benefit of semolina is selenium, an antioxidant that helps with the prevention of heart disease.
