讃岐うどん 蓮 | Sanuki Udon REN Hawaii made the best Jiro Style ramen noodles for me and I crushed it! It was so good, unbelievable texture and dashi was great too
If you don't know what Jiro Style Ramen is, it is considered the junk food of ramen, consisting of wavy semi thick noodles with what Japanese call (WashiWashi ワシワシ) as the texture of the noodles. The dashi is a shoyu dashi I think that they put pig back-fat into the soup to get it it's distinct flavor. But the main thing isn't the noodles or the dashi, it's the toppings that makes this dish so unique! When you are at the restaurant you have to order your ramen and when you sit down the master will call to you ニンニク入れますか? Or would you like garlic, in which you have to respond with four responses, garlic, kaeshi ( a shoyu based flavor enhancer for the ramen), pig back fat, and vegetables. Whilst doing that you must also say it whether you want it super a lot, a lot, regular, small, or none. And you need to be fast, loud, and understandable or else the manager will be mad 💢 💢! A lot of the Jiro Style ramen come with huge chunks of pork char sui and the portions are quite massive! Other topping include egg, cheese, mayo and some restaurants do surprise toppings if you ask!
Another cool thing influencers that can eat a lot, instead of saying the four phrases they just tell the manager something like "Christmas tree style" please and they will pack the bowl with bean sprouts and won bok and garlic and dust some red pepper flakes on it to look like a Christmas tree! It is really cool!
But be warned though because if you order a big portion and you can't finish it, the master will be really upset sometimes even making you pay for what you wasted!
I have only tried this type of ramen twice and it is really intimidating when going in by yourself so I really recommend going with a Japanese speaker! Also a lot of the famous ones only have counter seating usually like 8-10 seats so you might have a to wait a while to eat! This ramen is good but for foreigners there are a lot of rules and customs you need to respect but it is a cool noodles culture that I enjoyed in Japan and hopefully I can bring it to Hawaii!
