I’m working on the menu for this weekend’s cooking session with a couple of my nutrition clients… and last night I tested this quick and easy Curry Chicken Thighs with Spinach and Coconut šŸ›āœØ

This will be our third lesson together, and each one has been so much fun.
We started with warming soups and stews.

Last weekend was all about quick sauces and spice rubs — those plug-and-play flavor boosts you can throw on chicken, fish, or veggies after a long day.

Because healthy eating isn’t about perfection.
It’s about having a few go-to meals and flavors on rotation so you’re not staring into the fridge at 6pm wondering what to order.

Next up? One-pot meals.
Simple. Flavorful. Nourishing. Repeatable.

This is one of the foundations of the work I do — helping women build systems that make home cooking realistic and sustainable. Because eating mostly home-cooked meals is one of the most impactful things you can do for your health.

Ever find yourself looking at your wellness goals and thinking ā€œhow will I ever accomplish these?ā€

It can seem overwhelming at first, for sure, and scary! This is why we all often times need a little help and encouragement.

One of the ways that is most requested of me to help, once a plan is in place, is either recipes and cooking lessons or to actually cook for the client.
