Some great facts about NYC Style Pizza!

New York pizza myths are loud, but the slice itself is pretty honest.

The water gets all the folklore, but the real magic is repeatable craft: strong dough, smart fermentation, hot deck ovens, low-moisture mozzarella, balanced sauce, and years of slice-shop rhythm.

A great New York slice is built for the fold, not just for the photo.

The bottom needs enough crisp to support the slice, while the middle stays thin, chewy, and flexible instead of cracker-dry.

That low raised rim, light blistering, and browned underside all matter because they keep the slice sturdy without making it stiff.

Fresh mozzarella has its place, but the classic slice-shop blanket comes from low-moisture mozzarella melting into one clean layer.

The sauce should be bright and tomato-forward, not so wet that it turns the base into a paper plate emergency.

Update: Food trailer gets wrapped next week and Gramps takes some food safety courses at the end of the month. Then we are just waiting on approval from the health department and then we will be slinging slices!

We’re jumping through all the legal hoops and still hoping to be ready by July 4th 🤞

We have also been working with House of Wraps LLC and have locked down the design and date to get the unit wrapped! Super excited for you all to see it!

And of course Gramps has been fine tuning the recipes to make sure we are delivering a delicious, high quality product for you all to enjoy!
