So, what the heck is happening with Panciuto?

I’m getting this a lot, and I understand why. The answer is complicated, but here’s the cliff notes… Panciuto is on hiatus while I put my energy into Hillsborough Bakeshop and Pasta Company. A lot of what you love about Panciuto has been built into the Hillsborough Bakeshop & Pasta Co. concept, which is in the same physical space. The unique food quality, commitment to local sourcing, living wages, and general thoughtfulness that you’ve loved at Panciuto is very much alive at HBPC and I’d encourage you to come check it out.

Panciuto is not gone. It’s more like it just wakes up earlier, got a new haircut, and now prefers going by its middle name. It’s still here, it’s just a little different.

Finally, I’ll just add that I’m a chef’s chef, one who’s been on the line cooking dinner at Panciuto for 15 years. I think I’ve missed maybe 5 nights since I opened, and I wouldn’t do it any other way. But, it’s physically and mentally taxing (I’m not 28 anymore), and that’s a lot of time away from my family that I can’t get back. So, while I determine the long-term vision for Panciuto, know that you can find me and the Panciuto crew working everyday at Hillsborough Bakeshop and Pasta Co. creating a different, but comparably great restaurant. Been craving Panciuto pasta? In case you missed it, we're very excited to announce that moving forward, while Panciuto remains closed, we'll be expanding the Hillsborough Bakeshop hours and remaining open through the afternoon and into the early evening.

We'll be open from 8:30 a.m. - 6:00 p.m. Thursday, Friday, and Saturday with an expanded lunch/dinner menu. That means we'll be offering three housemade pastas, like this hand-rolled garganelli with roasted pork and mustard butter, in addition to our normal sandwiches and salads!

You can come by for lunch starting at 11:00, grab an afternoon pick-me-up around 3:00, or stop in and dine with us for an early dinner between 5:00-6:00. We'll be seating right through 6:00, and there's no reservations required! We hope you'll come eat dinner with us and enjoy a glass of wine or a cocktail this week! We've missed you.

The end of the year is coming before we know it! Our last regular dinner service of 2021 will be this coming Saturday, December 18th. But you'll have one more chance to get your fresh pasta fix next week on Monday, December 20th when we host a fundraiser for PORCH Hillsborough. We'll be slinging bowls of housemade spaghetti and meatballs and each ticket will also include a glass of primitivo and warm, fresh-baked cookie!

We're keeping the night super casual and encouraging folks to get in, chow down on their pasta, and then clear their seats so that we can maximize the funds raised for PORCH. Tickets are $35 each and 25% of total proceeds will be donated directly to PORCH Hillsborough. We're doing four seatings: 5:15, 6:00, 6:45, and 7:30. Space is limited and you DO need a reservation, so send us an email to [email protected] sooner than later to save your spots! Let us know your desired time slot in your email!

Potato and mushroom culurgiones with caraway butter, crauti, and rosé syrup. The first hint of fall is in the air and this dish is the perfect bridge between hot summer days and cool autumn evenings. Hey friends! We goofed and thought we might close on Thursday (the 26th) this week to give our staff a break, but then ended up changing our minds and decided to be open (and delay staff break a couple weeks). The result is that Thursday evening still has lots of reservations available! If you frequent Panciuto, you know that we love a thoughtfully-curated wine list full of lesser known but superbly drinkable bottles. We've historically leaned predominantly towards Italian and domestic bottles, but now that we've shifted gears to working exclusively with our friends over at Piedmont Wine Imports, a few French wines have snuck on the list. Shh... don't tell Aaron! We picked these three bottles for their ability to play well with our constantly shifting food menu, and because they are delightfully delicious all on their own. Next time you're in for dinner, look out for them and don't be afraid to ask us to guide you to the right bottle for your meal!
