Honestly… Fredericksburg Cast Iron Co. has finessed all the things about a cast iron. They are, quite frankly, the luxury STANDARD when it comes to cast iron. After walking through the factory with the owners(Heather and Jay) we determined that they also understand taking something simple, and making it 100x better than it ever could be. Thank you Heather and Jay, for being so accommodating and welcoming us with such open arms. You are pursuing, the American dream. Get it.

Fortunately for all of us, this works out pretty well as all flavors need a vehicle to your face. Lol. *Insert pasta, biscuits, or any other type of carb *

We made some cool cappelletti for the Texas Tide dinner last Sunday evening, stuffed with a scallop mousse. Served over a charred summer corn purée and Shannon made this wild, intense shellfish stock / sauce situation that we finished them in that was awesome.

But have you ever had octopus?! 😝

It’s one of my favorite things to eat and to cook, and finally… FINALLY we get to put it on a menu.

If you’ve been wanting to try something new, come with us. Bring your spouse, your best friend, your mom… whoever likes a little adventure.

These dinners are just fun. You get to slow down for a couple hours, eat things you probably wouldn’t order anywhere else, laugh, and leave with a new favorite food.
