Gaviota's Mexican Grill began with a dream, a dream that the owner, Gabriela Ortega, had since she was a little girl. Gaby always wanted to have her restaurant, so she started by selling burritos out of the back of her minivan in rural areas of Denver, Colorado. Later, Gaby moved to Oklahoma in search of a location to continue her food business and found the perfect spot, Hennessey, Oklahoma. She bought the taco bus that many people have come to know and love. As years passed, the taco bus did well, but Gaby still held onto her dream of owning a restaurant. She began to work towards this dream by purchasing the building where the restaurant is now located. Despite facing various challenges, Gaby made her dream a reality and Gaviota's Mexican Grill opened on April 23rd of 2023. Throughout our time in operation, we have encountered many challenges and gained valuable experience. Unfortunately, all good things must come to an end. We want to express our gratitude to everyone who has supported us on this journey. This restaurant has been a vessel to us meeting some amazing people, and while we are saddened, we are truly thankful for everything this restaurant has brought us.
That being said, in honor of this being our last day open, we are going to be hosting a bar party 'til 2 a.m. at our bar. Stop by and enjoy some drinks and music.
