Grilled Steak Bowl with Creamy Sauce & Grilled Zucchini 🥩🥒
Ingredients:
For the Steak:
1 lb thinly sliced beef (flank steak, skirt steak, or ribeye)
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon sesame seeds
For the Grilled Zucchini:
2 medium zucchini, sliced lengthwise
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Creamy Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped dill
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Bowl:
1 cup cooked rice
Sesame seeds, for garnish
Chopped green onions, for garnish
Instructions:
Marinate the Steak: In a bowl, combine beef slices, olive oil, paprika, garlic powder, salt, and pepper. Toss to coat. Marinate for at least 30 minutes, or up to 24 hours.
Grill the Steak & Zucchini: Grill the steak and zucchini slices over medium-high heat for 2-3 minutes per side, or until steak is cooked through and zucchini is tender-crisp. Sprinkle steak with sesame seeds.
Make the Creamy Sauce: In a small bowl, whisk together mayonnaise, sour cream, dill, lemon juice, garlic, salt, and pepper.
Assemble the Bowls: Divide cooked rice between bowls. Top with grilled steak, grilled zucchini, and drizzle with Creamy Sauce. Garnish with sesame seeds and chopped green onions.
Tips & Tweaks:
Spice it up: Add a pinch of red pepper flakes to the marinade.
Make it a meal: Serve the bowls with a side salad or soup.
