After 20 years in Calabasas, Calif., Gaetano's moved to it's present location in Henderson, NV. We are honored by Zagat this year be be given the status of "Best Italian Restaurant In Las Vegas", what more could we ask for. Let Nick explain how he tried a dozen different canned tomatoes and landed on the 'gold standard.'* Nothing but the best for our guests!

*About that basil leaf in every can: Says Nick, there are two reasons, one is culinary and one is economic. The culinary reason is that when canned tomatoes are pasteurized, "Adding a fresh sprig of basil right before sealing allows the heat of the process to infuse the tomato juices with a subtle, aromatic herbal note. It adds a hint of brightness, mimicking the flavor of fresh-off-the-vine tomatoes." And the economic reason? Decades ago, both the U.S. and Canada implemented heavy tariffs on canned tomato imports to protect local farmers. However, the tax code explicitly excluded sauces or processed recipes. Italian exporters realized that by throwing a leaf of basil into the can, they could legally argue that the product was instantly more than just "plain canned tomatoes!"
