There’s a new face behind the bar at Citizens and we’re excited to introduce him to you.
Citizens family, meet Shaun.
We’ve always believed the glass in front of you deserves just as much thought as the plate beside it. So when we thought about who we wanted behind our bar, we weren’t simply looking for someone who knew how to make a good drink.
We wanted someone who cared about making one.
Shaun has spent 16 years behind a bar, and somehow, there’s still a curiosity in the way he approaches it. He still wants to try something new. Play with an idea. Find the combination you wouldn’t have thought to order but won’t stop thinking about once you do.
His work has carried him to the Aspen Food & Wine Festival, Charleston Food + Wine Festival, Fort Worth Food + Wine, weddings and celebrations, and bars and restaurants across the country.
A lot of bars. A lot of people. A lot of stories told from the other side of a glass.
And now, his hands are making drinks here.

Right here in Hempstead, Texas.
There’s something pretty special about getting to bring that kind of experience home to our corner of the world.
It’s what we’ve always wanted Citizens to be. A place filled with people who care deeply about their craft and believe the smallest details are often the ones worth going out of your way for.
