Pork spareribs or beef ribs??? Which is your favorite type of rib to eat?

I enjoy eating both but my preference would probably lean towards the pork ribs, although I enjoy making the beef ribs way more.

The beef ribs are so fun to cook and extremely easy as well. Kosher salt + coarse black pepper and smoked for 6-8 hours. No wrapping or saucing required.

The pork spareribs however require a little more attention. They have to be trimmed, seasoned (also with S&P) before placing in the pit. Once they are in the pit for 3-4 hours, they will get wrapped and sauce’d with our Royal Barbecue sauce. The pork spareribs typically take 4-5 hours.

That was physically an extremely difficult cook. I literally babysat these birds from 10:30pm WED night through 9am THU morning. After the last pickup at 11am, my body was begging me to lay down and rest. My tank was on empty.

Looking back (after a nap), I am extremely grateful that so many of you not only supported us...but also chose our little operation to provide our product to your loved ones. To us, you are not just a customer. You are our friends, family and neighbors. We will always provide you with what we call our “Royal Treatment” service.

From the bottom of our hearts THANK YOU to all who have supported us through the years. We hope you and your family had a wonderful Thanksgiving holiday.
