The menu changes weekly, and it’s one of the most fun expressions of what we do here. Chef and the team get to play with what’s in season, what’s coming from the gardens, what feels right for that week. You get to come in, settle in, and see where it goes.

A weekend at Folia.

The kitchen ran loud, the open fire pulled its weight, and the dining room hit its hum by the second seating. We’re heading into June with the menu shifting again, the gardens have ideas, and we’re following them. Folia is now dinner only, Wednesday through Sunday, 5 to 9 pm. Brunch and lunch continue at Appellation Kitchen, our all-day room.

Spend an evening with us in Healdsburg, in the middle of Sonoma County wine country.

A few moments from dinner service.

Thank you to everyone who’s stopped in this spring. Maybe once, twice, or somewhere past counting. Folia is a special space, and when it is full it really shows. We’ve watched the menu turn over as the gardens caught up to themselves, and started recognizing more faces at the door. We can’t wait to see what summer looks like at this table.

Pork collar and snap peas, both grilled over live oak.

The top is scored in a tight crosshatch before it goes on the fire, so the crust catches deep without overworking the meat underneath. A consommé poured at the table, hot, just before you start — until the dish sits in its own moat of broth. A new course at Folia. Finished in front of you, not in the kitchen.

The bread on your table at Folia starts the day before you sit down.

Executive Pastry Chef makes a Japanese milk bread built on tangzhong, a cooked paste of flour and liquid that’s the reason the crumb stays this soft this long. Each loaf is eight 30-gram pieces, scaled by hand, pressed into discs, and stacked together to proof. Poppy seeds go on just before the oven. The minute it comes out, Nassim brushes the top with hot brown butter so it soaks in while the loaf is still steaming.

We serve it warm with our housemade cultured butter. It takes precision and time, and you can taste both.

A Friday night at Folia has its own shape. The room fills slowly through five, settles into its hum by six, and by seven the kitchen is moving at full pace. The three-course menu sets the rhythm, and the room arranges itself around it.

Radiatori, made in house, drawn through a purée of Koginut squash and brown butter, finished with a spoonful of stracciatella that melts the second it gets to the table. The pasta’s ruffles hold the squash where it should be held; the cheese does the rest.

An evening with Marine Layer and Auteur Wines.

Thursday, May 28, 6:00 pm at The Grange.

Marine Layer’s Baron Ziegler and Rob Fischer are joining us alongside Auteur’s Kenneth Juhasz and Chefs Charlie and Reed Palmer for a wine dinner built around the Sonoma Coast. Each course is paired to highlight two iconic vineyards, Durell and Gap’s Crown, through wines that actually express where they’re from.

The menu will shift with what’s in season. Live oak cooking, intentional ingredients, and wines worth sitting with.

Folia, as a name, holds three meanings at once.

The foliage of the Sonoma landscape that nourishes our table. The Latin word for a single sheet of paper, a quiet nod to the menu that defines each evening. And the culmination of Charlie Palmer’s culinary portfolio, the full expression of this place.

It’s our signature dinner experience: a three-course menu built around the growers and producers of Sonoma County, served Wednesday through Sunday, 5 to 9 pm.
