DIPLOMAT - Vanilla sponge cake, fresh orange, pineapple, diplomat cream, vanilla bean whipped cream.

Despite the name, we recommend not being diplomatic and just eating the whole thing yourself. Believe us, that is the right move.

"Cindy is my right AND left hand" - Chef Gabriela

Now that is high praise, but it's clearly deserved.

If you've ever had the Langos here — if you haven't, come in and correct that oversight immediately — you know how amazing it is. And Cindy is integral to the soul of that dish.

Cindy and Gabriela worked together before the inception of Bar Gabi, where they formed a tight bond, and she loves how she feels appreciated for the love she puts into her work. The one thing she loves most about her job at Bar Gabi is being part of the process for creating new desserts.

When she's not at Bar Gabi, she's searching for Salvadoran restaurants and loves going out dancing.

Next time you bite into one of Gabi's breads or pastries, picture Cindy cutting a rug on your palate. :)

It would be a lot easier to just order pre-cut fish out of a box. But “chef-owned” isn’t just a marketing buzzword for us. It means Gabe makes the call, and he refuses to skip steps. We break everything down in-house because we actually respect, love, and enjoy the craft of cooking more than convenience. It’s a massive amount of extra labor before the doors even open, but the hard way is the only way it’s getting to your table at Bar Gabi.
