One of the beefiest cuts, this Wagyu red bone-in striploin cut is the perfect middle ground between the tenderloin and ribeye steak! The main difference between a striploin and ribeye cut is that the striploin contains a more even distribution of marbling throughout the cut. Just like the boneless striploin steaks, this cut offers a wonderful and exquisite balance of tenderness and flavor. Also known as the ‘New York Strip’, the bone-in steakhouse cut is typically selected since the bone takes on a gorgeous color and frames the steak excellently. The bone also helps insulate the meat closest to it, making it abundantly more flavorful and juicier than the boneless striploin steaks. This cut is often served with marvelous sauces, but it also has immense amounts of flavor that it can also be served seasoned simply with salt and pepper.

Japanese A5 Olive Wagyu cattle are raised on a small Japanese island called Shodoshima, which is famous for its olive oil industry. Their diet consists of toasted olive peels, which give the steak a distinctive hint of olive oil taste and illuminates the umami flavor. Japanese A5 Olive Wagyu has won the top prize for the “best fat” at the Wagyu Olympics. Widely considered the rarest Wagyu in the world, only about 2,000 Olive Wagyu cows are harvested every year, and only a tiny fraction of that number is exported outside of Japan.

What is the difference between American and Japanese Wagyu? In addition to looser scoring/rating grading and various cattle-farming techniques and environments, the biggest difference between these two breeds is that Japanese Wagyu is purebred, while American Wagyu is crossbred. Bred with Angus cattle, American Wagyu is difficult to pinpoint, control, and regulate a specified percentage of purebred DNA. It does not have the same sweet, umami flavor that Japanese Wagyu does and it never quite reaches the same melt-in-your-mouth experience from the intense marbling. However, that does not mean it still isn’t delicious! Wildly marbled with exceptional flavor, it packs a similar beefy flavor that Americans enjoy from any Angus steak and you can devour more of it. On the other hand, Japanese Wagyu is outstandingly rich and fatty. Considered a delicacy, many cannot eat more than a few bites before it becomes overwhelming. There is not much of a beefy taste, but more of a sweet umami flavor that melts right in your mouth. If you are in the mood for a giant steak dinner, we recommend you to try out the American Wagyu! But if you are looking for something different, try out any Japanese Wagyu as it is quite unique! If you have the opportunity, try different types of Wagyu from different countries and you will surely appreciate it more than just being expensive.

Summer grilling season is here! Enjoy our premium Wagyu that is perfect for any indoor/outdoor cooking. Perfect to cook on an iron-cast skillet, try out any of our Japanese A5 Wagyu. However, if you are looking to grill and share with your family and friends, we highly recommend you to try out our American and Australian Wagyu for these events. All the fatty marbling and flavors of a Japanese Steak, but rich, tender, and meaty for an appetizing afternoon!
Quick Cooking Tip: We love the reverse-sear method for any of our Australian/American Wagyu! After seasoning it with just some salt and pepper, you can either place the steak in the oven or sous-vide it first, then finish it off by grilling it. No additional oil or butter is needed as Wagyu is naturally high in fat content! However, we do recommend coating the grill/pan with some butter or oil to prevent any sticking. Happy Grilling!

American Wagyu is produced when purebred Wagyu are crossed with traditional cattle breeds. From the rich marbling that Japanese A5 Wagyu offers and the intense tender, beefy flavor that American beef is known for, you can enjoy the best of both worlds! As most American Wagyu cattle are raised without the use of added growth hormones, they carry the “Natural” label. American Wagyu Filet Mignon, also known as the tenderloin steak, has the least amount of marbling of any American Wagyu steaks. However, its fine and buttery texture offers a mild beefy flavor that is finely-grained. This cut can be cut through with ease allowing us to enjoy the amazing tenderness of this steak.
