We wanted to offer something extra special at the restaurant, so we embarked on a culinary journey.
What started with an idea and a generic recipe to try out has evolved into something entirely different.
This is the fruit of hours upon hours of research and testing.
We traveled all the way back to the 18th century, to the court of King Louis XVI and his master baker's notes on brioche dough.
Then on to the commission of the creation of the "Liege Waffle" by the Prince Bishopric of Liege, for which there is no recorded recipe.
Leige waffles are based on a traditional brioche dough that has been transformed into a delightful treat like no other.
Not only did we create a wonderful waffle, but we took it over the top with a specialty menu and both classic and modern toppings.
In the image below is the culmination of that journey into culinary history and dozens of iterations of our recipe.
