Bought a case of IBP briskets about 80 pounds, proceeded to cure 1 for pastrami for 11 days, one for corned beef,seven days and rubbed the two others to add to our barbecue brisket sandwich coming new to our menu. When you rub briskets with a barbecue rub, this one is Kevmans pure ripper rib rub, you can’t go shy on the dry. You also gotta go big or go home. the smaller of the two will go in the Traeger, the other one will go in our alto sham SK 767 smoker. Send you follow pictures as they come to Serving stage.
