Added that wonderful carrot and fresh pineapple cake we had for Sue's birthday to our site so we can easily make it again. According to Ina Garten this is an 8 slice cake but with slices at around 670 calories each I would recommend 16 slices (or more)

To make the cake batter, in a large mixing bowl, beat the eggs, canola oil eggs together using an electric mixer with the paddles. Beat well until a light yellow color.

Combine the lukewarm water, a pinch of sugar and the yeast in a small bowl and set aside to proof for about 5 minutes. It should start to froth up a little.

Stuck in the house. Guess I have to cook. Problem is Sue and I get to eat it all. Today, date and walnut scones.
