Tickets are $55 and include a strawberry pink mimosa, a delicious three-course brunch, guest MC Lisa from Explore Harlingen, a silent auction, and a special guest speaker, Vanessa Cobarrubias, PA-C, former White House Fellow and co-founder of Rosa de Esperanza–Rose of Hope.

🇺🇸 25 Years Later… We Remember. 🇺🇸

Today marks 25 years since September 11, 2001 — a day that changed our country and so many of our lives forever.

Most of us can remember exactly where we were when we heard the news. We remember who we were with, what we were doing, the confusion, the fear, and the moment we realized that life as we knew it had changed.

Twenty-five years later, I still think about the lives that were lost, the families who were left behind, the first responders who ran toward danger, and everyone whose life was forever affected by that day.

Where were you when it happened? What do you remember most? And how did 9/11 affect you or your family?

I’d love for you to share your memories in the comments. Sometimes remembering and talking about these moments is how we make sure they are never forgotten.

Sometimes you just NEED something fried, cheesy, and Mexican! 🤤🧀🌮

Tonight’s craving turned into a quick homemade dinner using what I had on hand. I took flour tortillas, stuffed them with shredded home-cooked chicken, rolled them up, and deep-fried them until they were crispy and golden. Then I smothered them in my homemade queso because… why not?! 😂🧀🔥

Served them up with rice, beans, and a big dollop of sour cream on the side. Simple, homemade, crispy, cheesy comfort food! ❤️

Honestly, sometimes the best dinners are the ones you throw together when the craving hits! 😋

🏈🍀 Irish Nachos & a Whole Lot of Team Loyalty! 🍀🏈

I needed a good little snack to watch the Commanders vs. Ravens game tonight… because apparently I also needed something to comfort me while watching my team lose. 😂😭

Being born in Washington, D.C. and growing up in Maryland before eventually moving to Texas, I’ve been a Washington football fan my whole life. I grew up watching the Redskins, and now I proudly cheer for the Commanders. ❤️💛🏈

So tonight, I made myself some Irish Nachos! 🥔

I took some red potatoes, sliced them super thin and deep-fried them until crispy. Then I caramelized some onions with a little beer 🍺, piled everything over those crispy potatoes, and topped it with melted cheddar cheese, fresh chives, and sour cream. 🤤

The nachos? 10/10.
The game? …Let’s just say the nachos deserved a better ending. 😂

Win or lose, I’ll always cheer for my team. That Washington loyalty runs deep! 🏈❤️💛

Now excuse me while I eat my feelings. 😂

Sometimes the best meals are the ones you make out of what you already have! 🙌🏼🍳

I had some leftover rice, so I decided to give it a little Mexican twist! 🇲🇽 I tossed in some veggies, shrimp, chorizo, and egg and turned it into a delicious Mexican-style fried rice. 🤤🔥

For the sauce, I mixed up my homemade chipotle mayo with a little sour cream to make the perfect creamy, smoky replacement for Yum Yum sauce. 🌶️

And because I didn’t have egg rolls, I improvised with some crispy chicken taquitos on the side! 😂🙌🏼

Nothing fancy, just a little creativity and a fridge full of leftovers—and somehow it turned into a meal worth repeating! ❤️
