Sometimes the best specials aren’t planned weeks in advance. Tonight around 9:30, Paisley and I got a wild hair, headed to HEB, and grabbed everything we needed to put together something special for y’all.

Tomorrow we’ll have a very limited amount of our Comfort Bowl — smoked chuck roast, candied yams, collard greens, creamy mac & cheese, and our honey butter cornbread all in one bowl.

The best part? Paisley helped prep every bit of it. Watching her learn, work, and take pride in what we do means more to me than any award ever could.

We’ll also have our full barbecue menu available.

Happy Father’s Day to all the men out there showing up every single day.

I know it’s not always easy. Sometimes you’re choosing between keeping the lights on and making the ballgame. The pressure to provide, protect, and lead can be heavy, and some days it feels like the grind might break you.

But keep going.

Your family sees it. Your kids see it. And you’re doing a better job than you probably give yourself credit for.

Today, I’m especially thinking about my old man. I sure wish he was still here so I could share all of this with him. I’d give anything for one more conversation, one more meal, one more chance to tell him thank you.

Cheers to all the dads, grandfathers, stepdads, and father figures out there. Keep showing up. Keep leading from the front.

What an incredible night with Staccato 2011® and Staccato Ranch for their Friday Members Night!

The theme was Yacht Club, and we had an absolute blast serving up smoked chicken salad sandwiches, shrimp boil skewers, Caesar salad, and our spiced banana pudding complete with a Teddy Graham kicking back like he was on the beach.

More than anything, we’re thankful for the friendships we’ve built out at Staccato. At this point, they’re family, and we truly appreciate the continued support and opportunity to be a part of such a special community.

We’ll see y’all tomorrow Bourbon Speaks from 4–7 PM (or sellout)! Don’t forget, we’ve teamed up with Bourbon Speaks on a special Old Fashioned collaboration that you won’t want to miss.

We’ll be back tomorrow from 11 AM–4 PM (or sellout) with Tactical Smash Co. on site, serving up our ground prime brisket smash burgers:

Good morning, y’all!

Here’s our schedule for the week:

📍 Today – We’re headed to Bastrop for a catering event for a good friend and his company. We’re always grateful when friends trust us to feed their teams and be a part of their events.

📍 Wednesday & Thursday – Catch us at Smile Doctors - Harker Heights in Harker Heights from 11 AM until sellout. Full barbecue menu both days, and on Thursday we’ll have Tactical Smash Co. burgers on special! We grind our own Prime brisket trim for every burger, making them as fresh and flavorful as possible.

📍 Friday – We’ll be serving our Staccato Ranch Staccato 2011® family at Freedom Members Night. Thank y’all for the continued support and for always making us feel at home.

📍 Saturday – We’ll be Bourbon Speaks in Salado from 5 PM until sellout. If we decide to get started a little earlier, we’ll let everyone know on social media later this week.

As always, thank y’all for supporting our family-owned business. We couldn’t do this without you. Love y’all and we’ll see you this week!
