In a casual, fun atmosphere, we offer private and group diners a unique experience based on the fresh, savory ingredients originating in the coastal Mediterranean Basin. Byblos’ Bourbon of the Week🥃
One of the biggest bottles in our collection, Willet Reserve Pot Still, is famous for its unique decanter-shaped bottle modeled after a traditional copper pot still. Pouring at a 94 proof, Willet Distillery explicitly ages this bourbon in 100% new charred oak barrels to achieve a rich mahogany tone to make the liquor inside resemble the glowing copper of a real distillery still. While the official mash bill is undisclosed, it is widely speculated to feature a wheated recipe around 65% corn, 20% wheat, and 15% malted barley. Come get a neat pour of this bourbon to experience aromas of orange peel and brown sugar, soft approachable honey and wood tones flavors, and lingering hint of pepper and sweet grain. Now being poured at Byblos of Elmwood and Byblos of Lakeview!

A local favorite, Whiskey Tree Wheated Bourbon, features a 51% corn, 45% wheat and a 4% malted barley mash bill. With fruity and floral aromas, you can expect rich flavors of butternut squash, creamy brown butter, and warm baking spices from this 100 proof bourbon. Seven Three Distilling Co. named this line after a real 500 to 600 year old bald cypress tree hidden deep in the Honey Island Swamp; where moonshiners and New Orleans traders met during Prohibition to exchange illegal liquor, food and livestock. We recommend this bourbon on a large rock or in a classic Gold Rush, available now at Byblos of Elmwood and Byblos of Lakeview.

Welcome one of our newest bottles to the Elmwood Byblos Bourbon Collection, Colonel E.H Taylor Cured Oak 2026 Edition!! This is a 10 year old, 100 proof, bottled-in-bond bourbon from Buffalo Trace Distillery. It features Buffalo Trace’s signature Mash Bill # 1, believed to contain less than 10% rye, with the remainder being corn and malted barley. This bottle is a limited release, using white oak staves that are air-dried for 13 months, more than double the standard cure time of 6 months. This bourbon is known to have brown sugar and toffee undertone on the nose with a semi-sweet spice, rich vanilla, dried fruit, and cherry cola nuances on the tongue. You can expect a long, dry, and lightly spiced finish from this bourbon that we recommend neat for your first experience, now available at Byblos of Elmwood!
