As my birthday hits today, I can’t help but feel really grateful. For me, it’s not just about celebrating the day I was born—it’s about celebrating getting a second chance at life.
Back in 2018, just a few days before my birthday, I was diagnosed with cancer. The day after my birthday, I started chemotherapy. For the next two years, I went through treatment after treatment, but the cancer kept spreading, and nothing seemed to work.
I remember my doctor telling me there were only two possible outcomes: either the cancer would take my life, or the chemotherapy would. Hearing that made everything feel so uncertain. I didn’t really have big dreams at that point—maybe just hoping I’d make it to my brother’s graduation—but even the idea of celebrating another birthday felt unsure.
Then in 2020, around my birthday again, everything changed. I was told I was given a clean bill of health. Now, six years later, I’m still here. Not only did I survive, but I’ve also been blessed with my two amazing boys—something my doctor once said wouldn’t be possible. In every way, I’ve beaten the odds.
Every year that passes makes me feel even more thankful. However this past year has been incredible—I started my own business, met so many great people, and built real connections. I feel so lucky to be healthy, to be alive, and to be doing what I love. My heart is full because my life has turned into more than I ever imagined, just by being here.
I’m so thankful for my mom, who never stopped believing I’d get better; my younger brother, who grew up fast to help take care of me; my dad, who never made me feel like a burden; for my friends who have always been there for me and still are (which are more like family at this point) I’m also grateful for my husband who stands by my side, and for all the new people I keep meeting along the way. As long as we're healthy I cannot wait to see what this year has in store for me!

A New Name, Same Family. ❤️

As we’ve continued to grow, we wanted a name that better reflects who we are. Bringing our restaurant and market together, Salinas Restaurant felt like the right fit. It represents our passion for serving authentic, quality Mexican food while making it easier for everyone to know what we offer.

Don’t worry—our market isn’t going anywhere! We’ll still have the specialty items you know and love while continuing to focus on the food we’re passionate about.

Thank you for supporting our family-owned business through every step of this journey. We truly couldn’t do it without you.
