Hey friends! I know everyone is busy, but for those who come across this post, and know anything about baking, please lend a hand if possible.
So, I baked a coffee cake using a sourdough-blueberry-lemon coffee cake recipe. I subtracted the blueberries and lemon, of course, and instead used cream cheese emulsion with guava paste. (Please don’t hate on the flavor profile. 🤣 There’s a specific reason why I’m experimenting with these.)
So, day of baking, if you were to take a bite where the guava paste was, it’s very flavorful. If you got a bite without the paste, more on the bland side. Not a lot of the cream cheese flavor was coming through. It was more moist on day one as well.
Comments and concerns:
1. If you have used guava paste, any suggestions on baking with it.
2. If you have used cream cheese emulsion, any suggestions with how much to use when baking a standard loaf?
3. The Internet says to use buttermilk, sour cream, or Greek yogurt to increase moisture. Opinions? And please keep in mind, I’m baking under cottage food law.
Again, the loaf cake was not terrible. Actually, very enjoyable on day one.
