STORIES FROM THE APPALACHIAN TABLE
Where tradition and inspiration are revived and revealed.

What exactly is Appalachian food?

There isn't one exact recipe or one style that covers it all.

Appalachian cooking was built on resourcefulness and flexibility.

At Patchwork Provisions, that's what inspires us most.

Honoring tradition doesn't mean every ingredient has to be prepared the way it was generations ago. Sometimes it's about understanding why an ingredient mattered, then finding an unexpected way to use it.

Cabbage can become more than a boiled side. Apples don't have to mean dessert. Cornmeal can show up somewhere you wouldn't expect. Proteins aren't always predictable. A ingredient can meet a completely modern or forgotten technique.

The ingredient may be familiar. What we do with it doesn't have to be.

We're always going to explore the ingredients, people and traditions that shaped Appalachian food, how and why those old roots continue to inspire what we're creating at Patchwork today.

-Holler Wings-

Traditional wings have something boneless wings can't quite duplicate. The higher fat content and skin-to-meat ratio that keeps every bite juicy and flavorful. That's what led us to skin-on chicken thighs. We quarter them into wing-sized pieces, giving us the crispy skin and texture of a traditional wing that normal boneless wings just can't beat. What started as a practical idea turned into something we liked even better. It fits the Appalachian approach to cooking: take a humble, affordable ingredient and find a way to make it something worth talking about. They're familiar enough to feel like wings, but different enough to be unmistakably ours.
