For our Event Manager, Thomas, the dry-aged buffalo ribeye hits that rare sweet spot: familiar enough to love immediately, but rich and distinctive enough to feel like something completely different.

Thomas will happily argue that ribeye is the best cut of meat until the end of time, but even compared with Wagyu or prime beef, this one brings its own character. Robust, deeply flavorful, and unmistakably Saskatoon.

At Saskatoon Lodge, great beef starts with a higher standard.

We begin with upper two-thirds Choice Certified Angus Beef, wet-age it for 21 days to develop tenderness, then dry-age it for another 28 days to deepen the flavor.

Just before it leaves the charbroiler, each steak is finished with our house-made butter crafted from dry-aged beef fat and Wagyu tallow.

It takes more time, more care, and more work to source consistently. But once you taste the difference, the reason is clear.
