We’re delaying the launch of Square Works Pizza Lab until January 28th.

We spent some time pontificating over which excuse to use, then decided to list them all and let you pick your favorite.

• We’re delaying the opening one week because the dough achieved sentience and requested more time.
• Opening is now January 28th. The lab results were promising but legally “not pizza yet.”
• We planned to open sooner, but Pablo measured time in vibes instead of minutes.
• We’re pushing the opening to 1.28 due to a critical shortage of patience. Mostly mine.
• The pizzas are ready. The systems are not. I blame electricity.
• Opening moved to January 28th after a failed experiment involving optimism.
• We are delayed one week because someone said “It’ll be fine” out loud.
• New opening date: 1.28. Science demanded it. Pablo argued. Science won.

We could open now, but then we’d have to apologize later. This felt cleaner.
Either way, pizza tastes better with delayed gratification.

Hi friends,

I’ve been working on something new. And weird. And honestly a little risky.
Introducing Square Works Pizza Lab. A new pizza concept launching January 21st.

This is not a traditional restaurant. It’s delivery only. It’s experimental. Think Detroit style square pies, rotating test pizzas, surprise add ons, and marketing ideas that probably shouldn’t be approved by anyone reasonable.

Right now, before we open, I’m inviting you to be part of the founding group. If you head to the Square Works site and sign up for our email list or the Lab Rats Loyalty Program, you’ll be entered to win free pizza for a year.

Together we’ll craft not one, but two creamy risottos from scratch, learning the secrets of texture, flavor, and perfect technique. Then, I’ll show you how to take the leftovers and transform them into one of Italy’s most irresistible appetizers — golden, crispy arancini.

Risotto with Peas – choose your topping: delicate seared scallops or crispy pancetta.
