We are developing with plans to open in the local Pinckney/Hamburg area within 5 years. I am perfecting recipes, encouraging craft beer, and building hype.

Hey if you’re not on spring break we really need your business right now like ASAP. The struggle is real right now. If you are a fan or enjoy beer or Chef Tim’s wonderful food please consider us this weekend and in the near future. For anyone interested, BeerSmith just posted a podcast interview with me on the topic of multimodality in the chemical senses. This is about how the senses flow together in the brain and interact with various levels of neural processes, including cognitive ones. Understanding this is vitally important for both tasters and flavor creators, as this complex process is how we create our internal reality when we taste food and drinks.

Today we are at Husted's Market .15 gallons of various ciders has been acquired. 6 gallons of a pure honeycrisp that's going to be a cyser. 7 gallons of a fall blend that's going to be reduced down to five, then fermented, stabilized and back sweetened with brown sugar and cinnamon. A gallon of cherry fall blend, that's just for drinking. And a gallon of honeycrisp that's just for drinking.

Dark honey kolsch - this is very interesting it drinks like a cross between a brown ale and a Czech dark lager. Very interesting.

Scotch ale - sweet and malty, little hop bitterness and no hop character. Solid beer.

Brown ale - it's no bell's best...but it's good.

Wit - I need to stop trying these. I'm making myself mad with wits that taste like weisens. Completely different yeast strains. Shouldn't be like this. My heart hurts. But then again, that might be the burgers from

Hatch chilie burger with cheese curds... Holy crap this was yum.

Buffalo chicken sandwich was solid as well with tots.

Little place looks like it was built into a garage. Homebrew shop attached. Always good to see.

Polish lager with a good scent and taste of smoke. Absolutely delicious and a pleasantly unique depart from all of the other flavors I've been tasting today.

New Zealand lager. - good hop character, not too pungent and not too bitter to kill the taste buds. Again, a good departure from the other styles I've been seeing on my tour. Delicious but Tim Wicklund and Kayce Chaney made a better one.

Tripel - fantastic example of style. Lots of spice character from the yeast. Tastes like they fermented hot, throwing off a lot of the desirable characteristics. 10/10....

ESB - caramel and chocolate notes. Good beer.

Dark Czech lager - again I applaud breweries who are putting different styles onto their menu and rotation. If you're gonna have five different ipas have at least ten other things on tap. This beer is a wonderful example of this style. A bit of roast and a good bitter. Crisp lager mouthfeel and malt backbone. Not overly hopped. I love this beer. I really need to start lagering so I can recreate this and make it better.

Also they had lots of plug outlets so we could charge our phones. 😍😍
