Located in Grand Rapids, Michigan, Papa Chops Eatery is a pioneering "safe haven" for the gluten-free community. It holds the distinction of being the city's first entirely gluten-free fast-food restaurant, offering a menu where every single item—from the breading on the chicken to the dough of the pizza—is safe for those with Celiac disease or gluten sensitivities. The eatery was founded by Aaron Muller, whose life changed two weeks before his 40th birthday when he was diagnosed with Celiac disease. Frustrated by the difficulty of finding safe, high-quality dining options for his family, Muller decided to take matters into his own hands. He enrolled at the Grand Rapids Secchia Institute for Culinary Arts to master the craft of gluten-free cooking, eventually opening Papa Chops in June 2022 to recreate the "normal" fast-food experience he missed.

City had a water main break, they are working on it now. But I have zero water. So I'm going to have to close for a little bit until it's restored. Sorry, this is really bad news. Coming off a slow week this is the last thing PC needs.

Mozz are back on the menu! I'll be having a prep cook work on getting us stocked up but get 'em while they last!

Last week we had a power surge and it fried my pizza oven computers, I've ordered the parts but it may take another week to arrive. Until then I can make pizza's just one at a time =)

My Goodness, that was and intense two weeks! We went from having not enough staff to filling key roles with some amazing people. Peter and Cam are rocking the morning, and Deborn, Jasmyn, and Tyler are rocking the evenings. So we are well stocked to make sure crazy wait times don't happen again.

This week PC might get lucking and have an old friend helpout with a very old recipie. Cam(she works up front) has been perfecting the Mozz stix so you'll see her at the northern prep table =]
Regardless, I'll be bring in the Apple Balsamic Salad, and I'm putting the Mushroom Swiss Burg on the Menu Permanently, whoop whoop. I really love this sandwich.
