Gualerzi grew up in Northern Italy, and brings the rich traditions of food and love to her kitchen, staff and guests at IL Bistro. Her focus has continued to be bringing a combination of traditional Italian dishes together with some innovative creations that honor Italian cuisine. Using locally harvested ingredients, the Bistro's menu is as close to farm-to-table as Gualerzi can create. Seasonally

influenced, each offering has been influenced by Gualerzi's heritage. From stone-oven fired pizzas, artisan breads and hand-crafted desserts, attention to the smallest detail has been cared for. Pastas, breads, sauces and desserts are entirely house-made in the open-air kitchen. Care and consideration is apparent when browsing the Bistro's extensive wine list. A wide variety of Colorado and Italian wines will satisfy the most discerning of pallets; while leaving an option for every budget. Additionally, the bar features Colorado brewery and distillery creations. Il Bistro Italiano is the perfect place for family dinner, a romantic date night or a celebration with friends and family. Featuring two dining rooms and an intimate patio, there is room for a solo dining experience or rent the East Dining Room and let us help you throw a party. Sunday Tapas Night, cooking classes, specials on wine, and Regional Dinner Nights are just a few of the special evenings hosted throughout the year by the Bistro. Regional Dinners feature 4-course/3 wine meals, filled with talk of Italian cuisine, wine and regional facts. The Bistro is often a place full of celebration and laughter. We have a variety of house-made deli items available to be picked up and served at home alongside your turkey. Check out the available dishes below and call 970-243-8622 to place your order! Next Tuesday we start our annual Gift Certificate promotion - keep in mind that our gift certificates can be used to purchase anything from our ever expanding deli selection. Next week we will add Kobe roast beef, mashed potatoes, and butternut squash mash to our regular selection...and a new freezer is coming soon to give us more space for the items we want to offer!

Things have been pretty busy at il Bistro and I have neglected posting for a couple of weeks, but I have some exciting ideas. Tomorrow at 11:30 am, we will have what I hope will be the first of a long series of live videos that will be part culinary demos and part updates on the many products that we offer in our deli section of the restaurant. With the current surge in covid cases around here, the economic uncertainties that we all face, and the winter coming up fast, I want to offer ingredients and suggestions on how to prepare some of the dishes we regularly offer at the Bistro at home. We are also working on easier ways for you to order from from our deli selection and have it delivered to your home.
I hope you will join me at 11:30 tomorrow morning for a live FB video with a demonstration on how to make our "Pasta al Pollo" dish.
