Chef John Wilson and the Bella Colibri team were honored to participate in the Grand Tasting, joining some of the state’s most talented chefs, restaurants, wineries, breweries, distilleries, and artisan producers for a night dedicated to exceptional food and hospitality.

Following Chef John’s 2025 Chef of the Year nomination at the , the evening was another opportunity to share the creativity, technique, and passion that define the Bella Colibri kitchen.

Some dishes deserve a little extra time at the table.

Our Gamberoni features three jumbo prawns bathed in a brandy lemon sauce layered with plenty of fresh garlic and served with warm toasted bread for one important purpose: not a drop of that sauce should go to waste.

Pair it with the Gunslinger's Gambit, a rye that bites back and finishes smooth, crafted with rye, Chartreuse, Cynar, and demerara.
