an infinite and immeasurable amount of fun and revelry.

A Celebration of Our Roots: Six89 Revisited
This evening is particularly meaningful to us, as we take the opportunity to honor our roots and pay tribute to the restaurant that helped shape everything we do today—Six89.
For those who remember, Chef Mark Fischer opened Six89 in Carbondale in 1998, helping to put the lower valley on the culinary map with a focus on bold, thoughtful, and deeply satisfying food and drink. The Pullman has always aspired to carry that spirit forward—serving as a more approachable, everyday reflection of the ethos that Six89 established nearly three decades ago.
We’re honored to welcome Mark Fischer for the evening, who will be joining us in the kitchen to showcase a selection of his classic dishes, alongside a few new interpretations. Bill Bentley will also be with us, pouring wines thoughtfully paired to each course.
For those who miss Six89—or for those who never had the chance to experience it—this is a rare opportunity to revisit (or discover) a piece of that history, one course at a time.
